- olive oil
- bell pepper
- garlic
- black beans
- chickpeas
- walnuts
- brown rice
- yeast
- flaxseed
- sriracha sauce or ketchup
- dijon mustard
- sage
- thyme
- black pepper
- salt
- Vegan White Gravy

Preparation
Step 1
Preheat oven to 350°F (180°C).
Step 2
In a skillet over medium heat add oil, garlic and bell pepper.
Step 3
Saute for 5 minutes.
Step 4
Set aside.
Step 5
In a food processor or blender combine chickpeas, black beans, walnuts and rice.
Step 6
Add sauteed pepper and garlic to food processor or blender with previous ingredients. Blend until mostly smooth.
Step 7
Pour batter into a large mixing bowl and add remaining ingredients. Mix until combined.
Step 8
Place a thin strip of parchment paper into a greased loaf pan.
Step 9
Pour vegan meatloaf batter into prepared loaf pan. Repeat with remaining dough.
Step 10
Bake for 50 minutes, or until all is firm, browning and has a nice crust on top.
Step 11
Remove the loaf from the pan by lifting the ends of the parchment paper strip and placing the loaf gently on a serving platter or plate.
Step 12
Slice, and serve with Vegan Cashew Gravy.
