  • 1 flax egg (1 tablespoon ground flax seed mixed with 3 tablespoons of warm water)
  • 1 teaspoon vanilla extract
  • ¼ cup coconut chips (unsweetened)

Preparation

Step 1

Preheat the oven to 350°F. Grease or line an 8 x 8 pan with parchment paper, then set aside.

Step 2

In a large mixing bowl, combine the flours, Earth Echo Chai Bliss, baking soda and sea salt. Mix well.

Step 3

Add the maple syrup, oil, flax egg and vanilla extract. Mix until a smooth dough forms. Gently fold in the coconut chips.

Step 4

Press the dough into the prepared baking pan in one even layer. Optionally, sprinkle with a little flaked sea salt before baking.

Bake for 15 minutes or until firm and the edges are turning golden.

Step 6

Allow the blondies to cool in the pan for at least ten minutes before removing and slicing. They will continue to firm up as they cool.
