- 2 cups oat flour (use certified gluten-free if necessary)
- 1 cup granulated sugar of choice (I like to use coconut sugar)
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon ground nutmeg
- ¼ teaspoon salt
- 3 medium bananas (mashed)
- ⅓ cup coconut oil
- ¼ cup milk of choice (I like to use oat milk)
- 1 teaspoon vanilla

Preparation
Step 1
Preheat the oven to 350℉. Line a loaf pan with parchment paper and set aside.
Step 2
In a large mixing bowl, add the oat flour, sugar, cinnamon, baking soda, nutmeg, and salt. Mix well.
Step 3
To the same mixing bowl, add the mashed bananas, oil, milk, and vanilla. Mix until you have a smooth and uniform batter.
Step 4
Pour the batter into the prepared loaf pan then bake for 1 hour, or until the loaf is firm, golden and a toothpick inserted into the center of the loaf pulls out clean.
Step 5
Allow the bread to cool for at least 10 minutes before slice for the best results.
