- 4 ripe bananas (mashed)
- 1/4 cup coconut oil (melted)
- 1/2 cup milk of choice (I use unsweetened almond)
- 2-4 tablespoons maple syrup (completely optional)
- 1 cup buckwheat flour
- 1 cup tapioca flour
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon salt

Preparation
Step 1
Preheat oven to 350°F. Grease or line a loaf pan with parchment paper, set aside.
Step 2
In a large mixing bowl mash the bananas.
Step 3
Add remaining ingredients and whisk until smoothly combined.
Step 4
Pour into your prepared loaf pan.
Step 5
Bake for 50-60 minutes or until the loaf is firm and golden.

Let cool before slicing and serving.
