- 1 large bunch fresh cilantro (leaves and stems)
- 1 large fresh mild green chile (I like to use Anaheim chile)
- 3 garlic cloves
- 1 teaspoon cumin seeds
- 2 tablespoons white wine vinegar
- 1/4 cup extra-virgin olive oil
- salt to taste
- water (as needed, for consistency, I use around 1/4 cup)

Preparation
Step 1
Wash and roughly chop the cilantro.
Step 2
In a blender or food processor, combine the cilantro, green chile, garlic, and cumin seeds.
Step 3
Pour in the vinegar, olive oil, and a pinch of salt.
Step 4
Blend until smooth, adding water as needed to create a smooth, slightly runny sauce.
Step 5
Taste and adjust the salt if needed.
