Ingredients
1 serving
- 1 cup cubed beets (cooked)
- 1/2 cup raw pumpkin seeds
- 2 garlic cloves
- 3/8 cup parmesan cheese (shredded, vegetarian if necessary)
- 3 tbs olive oil
- 1 1/2 tbs lemon juice
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper

Preparation
Step 1
In a food processor or blender, combine all of the above ingredients.
Step 2
Blend until a smooth pesto forms.

Serve right away, or store in an airtight container in the fridge for up to one week.
