- 2 cups cooked beets (chopped)
- ¼ cup crumbled feta cheese (vegetarian/rennet-free if necessary)
- ¼ cup fresh parsley (chopped)
- ¼ cup extra virgin olive oil
- 2 tablespoons white vinegar
- 2 tablespoons lemon juice (fresh or bottled)
- ½ teaspoon garlic powder
- 1 pinch salt
- 1 pinch ground black pepper

Preparation
Step 1
In a large bowl, combine the beets, feta cheese, and parsley. Mix to combine.

In a small bowl, combine the oil, vinegar, lemon juice, garlic, salt and pepper. Whisk until smooth.
