- 2 cups red cabbage (shredded)
- 1 apple of choice (sliced into matchsticks )
- ½ red onion (thinly sliced)
- ¼ cup pistachios (crushed or chopped)
- ¼ cup oil of choice (I like to use avocado oil)
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey (or maple syrup if vegan)
- 2 teaspoons spicy brown mustard (or Dijon mustard)
- 1 teaspoon salt
- 1 teaspoon ground black pepper

Preparation
Step 1
In a large bowl, combine the cabbage, apple, onion and pistachios. Toss to combine.
Step 2
In a small bowl, add the oil, vinegar, honey, mustard, salt and pepper. Whisk until smooth.
Step 3
Pour the dressing over the slaw, then mix well.
