- 3 cups shredded green cabbage
- 1 cup shredded red cabbage
- 15 ounces chickpeas, (rinsed and drained)
- 1 large apple, (cored and cut into thin strips)
- 3 green onions, (sliced)
- 1 rib celery, (diced)
- 1/4 cup pepitas
- 1/4 cup dried cranberries, (optional)
- 2 tablespoons finely chopped parsley
- Tahini Dressing
- Kosher salt and freshly ground black pepper
- Squeeze of fresh lemon juice, (for serving)

Preparation
Step 1
In a large bowl, combine the cabbage, chickpeas, apple, green onion, celery, pepitas, cranberries (if using), and parsley. Season with salt and pepper, to taste.
Step 2
Make the tahini dressing and pour it over the slaw. Use tongs to toss until the slaw is evenly coated with the dressing.
Step 3
Squeeze a little fresh lemon juice over the top and enjoy!
