- 1 red onion (sliced)
- 2 garlic cloves (crushed)
- 1/2 teaspoon black or rainbow peppercorns
- 1/4 teaspoon red chili flakes
- 1 cup water
- 3/4 cup apple cider vinegar
- 1 tablespoon coconut sugar
- 1 teaspoon sea salt or pink salt

Preparation
Step 1
Add sliced onions, garlic, peppercorns and red chili flakes to a clean jar.
Step 2
On the stovetop, warm vinegar, water, salt and sugar until all is dissolved.
Step 3
Pour the vinegar mixture over the onions in the jar. Gently press the onions to ensure they are covered.
Step 4
Let come to room temperature then place the lid on the jar and keep stored in the refrigerator until ready to use.
