  • 1 teaspoon ground cinnamon

Preparation

Step 1

Start by peeling and coring the apples, then cut them into bite-sized chunks.

Step 2

Place these in a sauce pan with a little boiling water and simmer for five to 5-10 minutes until they become nice and soft.

Step 3

While the apples soften, place the strawberries (with the green part removed) with the maple syrup, into the food processor and blend for one minute until they turn into a smooth strawberry soup! Keep this to one side.

Step 4

Place the oats, chia seeds, almond milk and cinnamon into a bowl and stir together.

Step 5

Once the apples are cooked, drain them before mashing with a fork, then mix them into the oats. Set the oat mixture aside for 5-10 minutes to soak up the almond milk and turn creamy. You can also leave this to soak overnight.

Step 6

Layer the compote at the bottom of two glasses.

Step 7

Top with the oats and some fresh strawberries.
