- 30g ginger
- 75ml apple cider vinegar
- 50ml maple syrup
- 1 red eating apples

Preparation
Step 1
Place the ginger in a small saucepan, pour over 750ml boiling water and bring to the boil. Remove from the heat and steep for 10–15 minutes.
Step 2
Pour the apple cider vinegar and maple syrup into the Kilner jar and whisk together; add the apple.
Step 3
Pour the water and ginger into the jar. Put the lid on and set aside to cool. Store in the fridge for 24–48 hours.
Step 4
To decant, strain the liquid through a fine sieve and pour into a sterilised bottle. Store in the fridge for up to a week. We love this served with ice, soda water and a sprig of rosemary.
