- 6 thick cut sliced of bread (toasted)
- 3 avocados (cut in half and thinly sliced)
- 6-12 Smithfield Hometown Original Bacon strips (cooked until crispy and broken into smaller pieces)
- 1 recipe Green Harissa (below)
- 1 jalapeño
- 1 bunch cilantro
- 1 bunch parsley
- 1 cup fresh spinach
- ½ cup almonds
- 1 clove garlic (roughly chopped)
- 1 ½ teaspoons freshly-squeezed lemon juice
- ½ teaspoon ground cumin
- ½ teaspoon lemon zest
- 4 tablespoons extra-virgin olive oil (divided)
- water as needed

For the Green Harissa
Step 2
Combine everything in a food processor and whirl for 2 minutes until smooth. Add a few teaspoons of water if you need to smooth it out. It should be pesto consistency.
Step 3
Slather a few tablespoons of the Green Harissa on each piece of bread. Top with ½ avocado thinly sliced and fanned out and finish with equal amounts of the cooked bacon and herbs. Serve immediately.
