Ingredients
16-24 bars
- 4 cups old fashioned oats
- 1/4 cup Gold Medal whole wheat flour
- 1/2 cup shredded coconut
- 1/3 cup light brown sugar
- 1/2 teaspoon kosher salt
- 1 cup dried blueberries
- 1/2 cup coconut oil, melted
- 1/2 cup honey
- 1 1/2 teaspoons coconut extract
- 1/2 teaspoon vanilla extract

Preparation
Step 1
Preheat oven to 325 F. Spray a 9x13 pan with cooking spray and line with parchment paper. Set aside.
Step 2
Combine the oats, flour, coconut, brown sugar, salt, and dried blueberries in a large bowl. Stir well.
Step 3
In a separate medium bowl, whisk together the coconut oil, honey, coconut extract, and vanilla extract. Pour the wet ingredients over the oat mixture and stir to combine.
Step 4
Press the granola mixture into the prepared pan. Bake for 40 minutes or until the granola bars are golden brown. Allow to cool completely then cut into bars. Serve!
