- 5-6 medium Russet potatoes (peeled and cut into large chunks)
- water (to just cover potatoes)
- ¼ cup unsalted butter (or plant-based butter if necessary)
- 1 teaspoon salt
- ½ teaspoon garlic powder
- ¼ teaspoon ground black pepper

Preparation
Step 1
In large pot over high heat, add the potato chunks. Add cold water until the potatoes are just covered.
Step 2
Add the butter, salt, garlic powder, and pepper.
Step 3
Bring the potatoes to a boil, then reduce to a simmer and cover the pot with a lid.
Step 4
Allow the potatoes to simmer, stirring occasionally, for 35-45 minutes, or until most of the water has evaporated, the potatoes are fork tender and have started to break apart and are slightly creamy in texture.
Step 5
Turn off the heat, serve and enjoy!
