- 2 1/2 cups rolled oats (certified gluten-free if necessary)
- 7 tablespoons maple syrup
- 3 tablespoons coconut oil
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 3/4 cup raw walnuts (roughly chopped)
- 1/2 cup goji berries (also known as wolfberries)

Preparation
Step 1
Preheat oven to 275°F. Line a cookie sheet with parchment paper. Set aside.
Step 2
Pour rolled oats into a large mixing bowl. Set aside.
Step 3
In a small saucepan over medium-low heat combine maple syrup, coconut oil, cinnamon and salt. Whisk until all is combined and warmed throughout (only 1-2 minutes).
Step 4
Pour your maple-oil mixture over oats. Stir vigorously until all is evenly coated.
Step 5
Spread your granola mixture onto your parchment paper lined cookie sheet in a single, even layer.
Step 6
Bake for 30 minutes.
Step 7
Remove from the oven and evenly sprinkle walnuts on top.
Step 8
Return to the oven and bake for 8 minutes longer.
Step 9
Remove from the oven and sprinkle the top with goji berries.
Step 10
Return to the oven and bake for 2 minutes longer.
Step 11
Remove from the oven and let cool completely before serving or storing.
