Ingredients
4 servings
- 1 cup dry uncooked polenta (or coarsely ground cornmeal)
- 1 cup gluten-free all purpose flour (or regular flour if not gluten-free)
- 2 tablespoons tapioca starch (or corn, potato or arrowroot starch)
- 1 ½ teaspoons sea salt or pink salt
- 1 teaspoon baking powder
- 1 teaspoon psyllium husk powder (or 1 egg if not vegan or dairy-free)
- ¼ teaspoon baking soda
- ⅛ teaspoon ground cayenne
- 1/2 medium white or yellow onion (finely diced)
- 1 13.5-ounce can full fat coconut milk (or buttermilk if not vegan or dairy-free)
- 2 teaspoons apple cider vinegar
- 1 teaspoon maple syrup (or raw honey if not vegan)
- 4 tablespoons plant-based butter, chopped (or regular butter if not dairy-free or vegan)

Preparation
Step 1
Preheat air fryer to 390°F. Grease air fryer basket/tray and set aside.

Combine dry ingredients

In a large mixing bowl add polenta, flour, starch, salt, baking powder, psyllium husk powder, baking soda, cayenne. Mix well. Fold in diced onion.

Add wet ingredients

To the dry mixture add coconut milk, vinegar and maple syrup. Mix all together well. Gently fold in the chopped butter.

Scoop batter

Use a tablespoon and scoop out rounded mounds of batter from the bowl (approximately golf ball-sized).

Roll into balls

Using wet hands roll the batter into a smooth ball of dough. Place each dough ball into your greased air fryer basket/tray, ensuring none are touching each other.

Air fry at 390°F for 12-15 minutes, or until all hush puppies are turning crisp and golden.
