- 1/2 c. white balsamic vinegar
- 2 tsp. finely grated lemon zest
- 1 tsp. Dijon mustard
- Kosher salt
- 1 c. extra-virgin olive oil
- 1/2 c. finely chopped shallots
- 4 medium yellow peaches, halved lengthwise, cut into 1/4" -thick slices
- 4 Persian cucumbers, sliced 1/4" -thick rounds
- 2 c. fresh blueberries
- 2 tbsp. thinly sliced fresh basil
- 3/4 c. crumbled feta (about 4.5 oz.)

Preparation
Step 1
In a large bowl, whisk vinegar, lemon zest, mustard, and 1/2 tsp. salt. While whisking, slowly pour in oil until smooth and emulsified. Add shallots and whisk to combine.
Step 2
Add peaches, cucumbers, blueberries, and basil and toss to combine. Top with feta.
