- 1 red chilli
- 1 red onion
- 4 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- pinch of sea salt

Preparation
Step 1
Begin by making the pickle. Place the chilli, red onion, vinegar and maple syrup in a small bowl with a large pinch of salt. Set aside for 15 minutes, while you make the salad.
Step 2
Cook the quinoa according to packet instructions. Once cooked, drain and set aside.
Step 3
Place a pan of water over medium heat. Once boiling, add the green beans and simmer for 4 minutes until tender. Drain and run under cold water until cool to touch.
Step 4
Toss the green beans, mango, mint, quinoa and olive oil together in a large bowl. Strain the pickle and stir the liquid through the salad. Season to taste and serve topped with the drained pickle.
