- 500g mixed heritage carrots
- 3 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- pinch of sea salt

Preparation
Step 1
Preheat oven to 190C (375F), fan setting.
Step 2
Mix together the spices and oil, drizzle over the carrots, and cook for 30-35 minutes until tender.
Step 3
Mix together all of the drizzle ingredients until smooth, adding more almond milk if needed.
Step 4
Place the cooked carrots onto a serving dish and drizzle with the dressing and handful of pomegranate seeds.
