- 1½ tablespoons brown rice miso paste
- 4 tablespoons maple syrup
- 1 tablespoon olive oil
- 60ml water
- 5-6 parsnips
- 5-6 carrots

Preparation
Step 1
Preheat oven to 190°C / 170°C fan / 375°F.
Step 2
Pour the miso paste, maple syrup, olive oil and water into a medium bowl, whisk to combine.
Step 3
Place the carrots and parsnips onto a baking tray large enough to hold them in a single layer; pour over the miso glaze and toss to coat. Cover with a piece of foil and pinch around the edges to ensure the vegetables are completely enclosed.
Step 4
Place into the preheated oven and bake for 25 minutes. Then carefully remove the foil and place them back into the oven to bake for a further 20 minutes. Sprinkle with fresh flat-leaf parsley before serving.
