1 serving
- 75g rice noodles
- 2 spring onions
- Zest and juice of 1 limes
- ¼ teaspoon of toasted sesame oil
- ½ of miso-glazed aubergines
- ½ a mangos
- ½ a red chillies
- small handful of mint leaves
- 1 small handful of coriander
- a small handful of toasted red skin peanuts

Preparation
Step 1
Cook the noodles according to packet instructions. Run under cold water to halt the cooking process and place in a medium bowl.
Step 2
Place the spring onions in a small bowl and stir in the lime juice and sesame oil.
Step 3
Top the noodles with the aubergine, mango, chilli, fresh mint, coriander, and spring onion mixture. Scatter over the peanuts and toss to combine.
