- 3.5 oz quinoa
- 1 handful of mango
- 1 avocado
- 1 small cucumbers
- 1 red pepper
- 1 red chilli
- A large handful of roasted hazelnuts

Preparation
Step 1
Place the quinoa in a saucepan with boiling water and a little salt.
Step 2
Let this cook for about 15 minutes until soft with a little bite. Once cooked, remove and leave to cool.
Step 3
Once the quinoa has cooked and cooled, place all of the salad ingredients into a bowl and mix well.
Step 4
Pour over the dressing ingredients and mix well before serving.
