Preparation
Step 1
Make the caramelised onion and mushroom topping while the pizza base is proving. Heat a drizzle of olive oil in a large, heavy-bottomed saucepan. Add the onions and a sprinkle of salt and cook for about 15 minutes, stirring frequently until softened and reduced. Then add the mushrooms, balsamic vinegar, coconut sugar, thyme, and 1 tablespoon of water. Cook for about 10 minutes, stirring often, until darkened and caramelised. If the mixture catches on the bottom of the pan during cooking, add a small splash of water to help release it. Remove from the heat and allow to cool slightly while you prepare the base.
Step 2
Preheat oven to 220°C fan / 460°F. Lightly oil a 30 x 20cm / 7 x 11″ baking tray. Shape the dough into a rectangle, directly on the tray, using your fingertips.
Step 3
Spread the dough with ⅓ of the tomato sauce. Top with the caramelised onions and mushrooms. Bake for about 15 minutes, until the crust is dark golden brown. Transfer to a cutting board using a spatula, drizzle with cashew cream and top with fresh basil and chilli flakes, if desired.
