4 servings
- ¼ red cabbage
- 2 carrots
- 1 red onion
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 tablespoon extra virgin olive oil
- ½ bunch of coriander
- ½ bunch of mint
- 4 heaped tablespoons hummus
- 2 handfuls of spinach
- 4 wholemeal wraps
- pinch of flaky sea salt

Preparation
Step 1
In a large bowl, toss together the cabbage, carrots, onion, apple cider vinegar, maple syrup, olive oil and a generous pinch of salt; stir through the coriander and mint.
Step 2
To assemble the wraps, dollop a spoonful of hummus onto each wrap, then pile on some slaw and a handful of spinach. Roll up, cut in half and serve immediately.
