- 2 pints cherry tomatoes (red or a medley )
- 3/4 cup red onion (small-diced)
- 2 tablespoons champagne vinegar
- 3 tablespoons olive oil
- 1½ teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons fresh basil leaves (chopped)
- 2 tablespoons fresh flat-leaf parsley (chopped)
- 3/4 pound feta cheese

Preparation
Step 1
Cut the tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parsley and toss well. Dice the feta into a ½- to ¾-inch dice, crumbling it as little as possible. Gently fold it into the salad and serve at room temperature.
