- 2 cups old fashioned oats
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups unsweetened vanilla almond milk, or milk of your choice
- 1/4 cup pure maple syrup
- 3 tablespoons coconut oil, melted and cooled
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup shredded zucchini, excess moisture squeezed out in paper towel
- 1/3 cup chocolate chips
- Optional: extra chocolate chips, for topping

I like to use Dutch processed cocoa, but unsweetened cocoa powder works well too.
You can double the recipe and bake in a 9×13-inch pan.
Store in airtight container in the fridge for up to 5 days.
