Ingredients
4 cups
- 1½ cups diced fresh pineapple
- 2 tablespoons fresh lime juice (from 1 lime)
- ½ cup finely diced red onion (from 1 small red onion)
- ½ cup seeded and diced English cucumber (from 1 small cucumber)
- 3 tablespoons seeded and minced jalapeño pepper (from 1 to 2 peppers)
- 1 tablespoon sugar
- 2 tablespoons vegetable oil
- ¼ teaspoon salt
- ¼ cup chopped fresh cilantro
- 1 large ripe avocado, cut into small dice (about 1 cup)

Preparation
Step 1
In a bowl, combine all the ingredients except the avocado and toss until evenly combined.
Step 2
Refrigerate until ready to serve, up to a few hours.
Step 3
Right before serving, add the avocado and gently stir, taking care not to mash the avocado.

Taste and adjust seasoning, if necessary.

Chef's notes
English or hothouse cucumbers have a thinner, more tender skin and do not require peeling. If substituting with a regular cucumber, which has a thicker and often waxed skin, it's best to peel it first.
