Ingredients
1 jar
- 1 cup apple cider vinegar
- 6 tablespoons sugar
- 1 tablespoon salt
- 1 large red onion, cut into ⅛-inch slices

Preparation
Step 1
In a small nonreactive saucepan, bring the vinegar, sugar, and salt to a boil. Stir until the sugar and salt are dissolved.
Step 2
Remove the pan from the heat, and add the onion to the pan.
Step 3
Let sit, stirring occasionally, until the onion slices are softened, 10 to 15 minutes.
Step 4
Transfer the onions to a medium jar and pour the vinegar mixture over the top.
Step 5
Press the onions down so that they are completely submerged.
Step 6
Let sit for at least 30 minutes before using.
Step 7
Cover the jar and store in the refrigerator for up to a week.
