- 2⅓ cups all-purpose flour
- 2 tsp baking soda
- ¼ tsp salt
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp ground allspice
- ¼ tsp ground cloves
- ⅛ tsp freshly ground black pepper
- ¾ cup (1½ sticks) unsalted butter, at room temperature
- ¼ cup plus 2 Tbsp granulated sugar
- ¼ cup plus 2 Tbsp packed light brown sugar
- 1 egg
- ⅓ cup unsulphured molasses, such as Grandma's Original
- ½ cup raw sugar (for rolling cookies)

The cookies will last nicely, stored in an airtight container at room temperature, for up to 3 days.
The cookie dough can be frozen for up to 3 months. Form the dough into balls, freeze on a baking sheet, and then transfer to a sealable bag.
To bake from frozen, add 1 to 2 minutes to the baking time.
