Ingredients

36 cookies
  • 2⅓ cups all-purpose flour
  • 2 tsp baking soda
  • ¼ tsp salt
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground allspice
  • ¼ tsp ground cloves
  • ⅛ tsp freshly ground black pepper
  • ¾ cup (1½ sticks) unsalted butter, at room temperature
  • ¼ cup plus 2 Tbsp granulated sugar
  • ¼ cup plus 2 Tbsp packed light brown sugar
  • 1 egg
  • ⅓ cup unsulphured molasses, such as Grandma's Original
  • ½ cup raw sugar (for rolling cookies)

Preparation

The cookies will last nicely, stored in an airtight container at room temperature, for up to 3 days.
The cookie dough can be frozen for up to 3 months. Form the dough into balls, freeze on a baking sheet, and then transfer to a sealable bag.
To bake from frozen, add 1 to 2 minutes to the baking time.
