- 2 sweet potatoes (peeled, sliced into ½” rounds)
- 3 tablespoons oil of choice (I like to use avocado oil)
- 1 teaspoons salt
- 1 teaspoon smoked paprika
- 1 teaspoon honey (use maple syrup if vegan)
- ½ teaspoon garlic powder

Preparation
Step 1
Preheat the oven to 425℉. Line a large baking sheet with parchment paper and set aside.
Step 2
In a large mixing bowl, combine the sweet potato slices, oil, salt, paprika, honey, and garlic powder. Toss all to coat well.
Step 3
Arrange the slices in a single layer on the prepared baking sheet.
Step 4
Drizzle any remaining mixture left in the bowl over the sweet potato slices.
Step 5
Bake for 15 minutes, flip, then bake for 15 minutes longer, or until fork-tender and caramelized around the edges.
