- 1 cup green lentils
- 2 cups water
- 1 can coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red chili flakes
- 1 tablespoon olive oil
- Fresh cilantro, for garnish

Preparation
Step 1
Rinse and drain the green lentils.
Step 2
In the Instant Pot, set it to sauté mode and add olive oil.
Step 3
Once hot, add chopped onion, garlic, and ginger. Sauté for about 3-4 minutes until the onion becomes translucent.

Add curry powder, cumin, turmeric, salt, black pepper, and red chili flakes. Stir to incorporate the spices with the onions and garlic.

Add the rinsed lentils and water. Stir well to ensure the lentils are covered with the spice mixture.

Seal the Instant Pot lid, set to 'Pressure Cook' on high for 15 minutes.
Step 7
Once the cooking time is complete, allow the pressure to naturally release for 10 minutes, then carefully quick release any remaining pressure.
Step 8
Open the lid, stir in the coconut milk.
Step 9
Set the Instant Pot to 'Sauté' mode again and let the curry simmer for 5 minutes, stirring occasionally.
Step 10
Serve the curry hot, garnished with fresh cilantro.
