4 servings
- 2 tablespoons avocado oil (or oil of choice)
- 10 garlic cloves (finely chopped)
- 2 cups cooked rice (I like to use white jasmine rice that I cooked the day before and stored in the refrigerator)
- 2 green onions (white and green parts, finely chopped, plus more for optional garnish)
- 2 teaspoons soy sauce (gluten-free if necessary OR coconut aminos)
- 1 teaspoon salt
- ½ teaspoon ground black pepper

Preparation
Step 1
In a skillet or wok over medium-high heat, add the oil and garlic.
Step 2
Fry the garlic until just golden, or about 1 minute.
Step 3
Remove the garlic and set it aside. Leave the oil in the pan.
Step 4
Turn the heat to high, then add the rice and green onions. Cook for 3 minutes while stirring frequently.
Step 5
Add the soy sauce, salt, pepper, and reserved garlic. Cook for 2 minutes longer.
Step 6
Optionally garnish with more chopped green onion before serving. Enjoy!
