Ingredients

  • 1 medium zucchini, chopped and frozen
  • 1 cup unsweetened almond milk, plus more as needed
  • 4 soft Medjool dates, pitted*
  • 2 tablespoons almond butter, plus more for drizzling
  • 1 tablespoon cocoa powder
  • ½ teaspoon vanilla extract
  • ¼ teaspoon nutmeg
  • Handful of ice
  • Chocolate chips, optional, for sprinkling
  • Coconut flakes, optional, for serving

*If your dates are not soft, soak them in warm water for 5 to 10 minutes. Pat dry before using.
This recipe is fantastic as written, but if you want to change it up, you can try different nut butters like tahini or peanut butter, add a scoop of protein powder or chia seeds, and even nix the chocolate for a fruity version by skipping the cocoa powder and dates, adding fruit instead.
