- 3/4 cup chunky or smooth almond butter (I use chunky)
- 1/2 cup coconut sugar
- 2 teaspoons ground ginger
- 1/2 teaspoon rose, pink himalayan, or sea salt (+ extra for topping)
- 1 egg

Preparation
Step 1
In a large mixing bowl combine all of the above ingredients.

Mix swiftly until well combined and slightly glossy.
Step 3
Form into a ball, cover, and refrigerate for at least 30 minutes, or until ready to bake.
Step 4
Preheat oven to 350°F. Line a cookie sheet with parchment paper.
Step 5
Form your cookie dough into rounded tablespoon portions. Roll into balls and place on your parchment paper lined cookie sheet.
Step 6
Bake for 11-13 minutes, or until bottoms and edges are golden.
