Ingredients
About 2 cups
- 2 large carrots (8 ounces), roughly-chopped
- 1/3 cup avocado oil (or any mild-flavored oil)
- 1/4 cup rice vinegar
- 2 tablespoons finely-chopped fresh ginger
- 2 tablespoons honey
- 1 tablespoon white miso
- 1 teaspoon toasted sesame oil
- fine sea salt and black pepper, to taste

Preparation
Step 1
Blend. Add all ingredients to a blender and pulse until completely smooth. If you would like a thinner dressing, blend in 1/4 of water until smooth.
Step 2
Season. Taste and season with salt and pepper as needed. (I add about 1/4 teaspoon of each, but the saltiness will also depend on your miso.)
Step 3
Serve. Serve immediately or store in a sealed container for up to 1 week.
