- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- pinch of sea salt

Preparation
Step 1
Heat oven to 200C / 180C fan / gas 7.
Step 2
Put the sweet potato onto a baking tray and pour over the olive oil, sprinkle on the cumin, paprika, a big pinch of flaky sea salt and crack of black pepper and mix to coat the potato. Roast for 40 - 45 mins, tossing halfway through until soft and golden.
Step 3
Meanwhile make the dressing by putting all the ingredients into a high-speed blender and blitz until you have a smooth creamy dressing, adding a splash more oat milk or olive oil if needed. Serve in a bowl alongside the crispy spiced sweet potato wedges to dunk into.
