Ingredients

- 300ml oat milk
- 2 tablespoons milled flaxseeds
- 2 teaspoons vanilla bean paste
- 4 teaspoons of coconut oil
- 4 slices good-quality sourdough bread
- 2 handfuls of frozen mixed berries
- 2 tablespoons peanut/cashew butter
- 2 teaspoons maple syrup

Preparation
Step 1
Mix together the oat milk, milled flax seeds, and vanilla bean paste in a deep plate. Set aside until thickened, 10 minutes.
Step 2
Place the bread into the oat milk mixture and set aside to absorb for 5 minutes, turning halfway to ensure even soakage. ( scrape off any particularly large parts of flaxseed as they burn easily)
Step 3
Place a large nonstick frying pan over medium-high heat and add the coconut oil. Swirl to coat the pan with a thin layer of melted oil. Add the bread and cook, undisturbed, until golden, 2-3 minutes per side. Transfer to a serving plate. Add the frozen berries and cook, stirring throughout, until softened and start to release their juices, about 2 minutes.
Step 4
Divide the French toast between two plates and top with peanut butter, warm berries, and maple syrup.
