  • 1 punnet strawberries
  • 3 tablespoons maple syrup
  • 1 lemon
  • few sprigs mint

Preparation

Step 1

Put ½ of the strawberries, the maple syrup, lemon juice and zest in a pan and bring to a simmer. Simmer for 5 minutes until the strawberries have reduced and become thick and syrupy. Stir through the remaining strawberries and set aside to cool completely.

Step 2

Meanwhile, mix together all of the ingredients for the oats and then stir through ¾ of the strawberry mixture. Divide between glasses, cover and leave in the fridge overnight. The next day, finish by spooning the remaining strawberries on top and add a sprig of mint, if you like.
