Ingredients
3 servings
- 6 pieces of good-quality sourdough bread
- 2 oz mixed baby tomatoes
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 large handful of basil
- 2 tablespoons capers
- 2 halved garlic
- 1 tablespoon balsamic vinegar
- pinch of sea salt

Preparation
Step 1
Toast the sourdough. Once toasted, cut each slice in half and leave to one side.
Step 2
In a large bowl, mix together the rest of the ingredients, apart from the garlic.
Step 3
Drizzle some additional olive oil over each slice of toast, before rubbing with half a garlic clove - this makes them taste delicious.
Step 4
Top each slice of toast with a large spoonful of the tomato mixture before serving.
