- 150g rice noodles
- 1 large carrots
- 1 large courgettes
- 1 tablespoon sesame seeds
- 3.5 oz frozen edamame beans
- 1 red chilli
- handful of coriander

Preparation
Step 1
Start by cooking the noodles according to the instructions on the pack.
Step 2
Once cooked, drain and leave to one side.
Step 3
Spiralise the carrot and courgette into thin noodle shapes. If you don’t have a spiralizer, you can use a grater to create a similar effect.
Step 4
Place the edamame beans into a bowl and cover with boiling water. Leave for 5-10 soft and cooked through, before draining and then leave to one side.
Step 5
In a small bowl, mix together all of the sauce ingredients.
Step 6
Place a large pan over a medium heat and add a drizzle of sesame oil. Once warm, add the carrot and courgette noodles.
Step 7
Stir well and cook for 5 minutes before adding the noodles, sesame seeds, edamame beans and sauce.
Step 8
Mix well and cook for a further 5-10 minutes until everything has warmed through.
Step 9
Top with fresh chilli and chopped coriander before serving.
