Ingredients
2 servings
- 4 slices of toasted bread
- 1 handful of rocket
- 4 tablespoons of hummus
- 1 courgette
- 1 red pepper
- pinch of sea salt
- pinch of sea salt & black pepper

Preparation
Step 1
Preheat oven to 200c, fan setting.
Step 2
Place the sliced courgette and pepper onto a baking tray with a drizzle of olive oil, salt and pepper.
Step 3
Place in the oven to cook for 15-20 minutes until soft.
Step 4
While the vegetables roast, toast the bread.
Step 5
Once toasted, spread 2 tablespoons of hummus onto 2 slices of the toast, before adding the rocket.
Step 6
Once the vegetables have cooked, remove from the oven and place into the sandwiches.
Step 7
Crack some fresh black pepper on top, before topping with the rest of the toast.
