Ingredients

- 4 slices bread
- 1 onion
- 4 Portobello mushrooms
- 1 tablespoon balsamic vinegar
- 1 teaspoon mixed dried herbs
- 2 teaspoons coconut sugar
- 1 handful of rocket
- 1 large vine tomatoes
- 2 tablespoons hummus
- drizzle of olive oil
- pinch of sea salt

Preparation
Step 1
Preheat the oven to 190C (375F), fan setting.
Step 2
Place the portobello mushrooms onto a baking tray and drizzle with olive oil, 1 tablespoon of balsamic, the mixed herbs and a pinch of salt. Mix well and cook for 20 minutes.
Step 3
While the mushrooms cook, place a pan over a medium heat and add a drizzle of olive oil. Once warm, add the sliced onions and a pinch of salt. Cook for 10 minutes until the onions are soft. At this point, add the coconut sugar and mix well. Continue to cook the onions for a further 5-10 minutes until golden and caramelized.
Step 4
Assemble the sandwiches; spoon 1 tablespoon of hummus onto the bottom of 2 pieces of bread and top each with half of the sliced tomatoes, mushrooms, caramelised onions and a small handful of rocket. Top each with another piece of bread.
