- 2.5 oz desiccated coconut
- 4.8 oz almonds
- 10 pitted Medjool dates
- 2 tablespoons almond butter
- 2 teaspoons cacao powder
- pinch of sea salt

Preparation
Step 1
Start by placing the almonds and desiccated coconut into a food processor and pulsing until a flour forms, about 2 minutes.
Step 2
Add the almond butter, cacao powder, salt and dates and pulse again until a sticky paste forms, about 5 minutes.
Step 3
Scatter any reserved desiccated coconut over a baking tray.
Step 4
Using a large spoon, scoop out equal amounts of the mixture and roll into small balls using your hands.
Step 5
Once you have your balls, roll them in the desiccated coconut to form a coating on the outside.
Step 6
Place in the fridge to firm up before enjoying.
