- 150g buckwheat
- 300g mixed seeds
- 300g mixed nuts
- 5.3 oz coconut flakes
- 2.6 oz cacao nibs
- 2 teaspoons ground cinnamon
- 5.3 oz coconut oil
- 5 fl oz maple syrup

Preparation
Step 1
Preheat the oven to 160°C fan / 350°F. Line a large baking tray with baking parchment.
Step 2
Pour the buckwheat, seeds, nuts, coconut flakes, cacao nibs and cinnamon into a large bowl.
Step 3
Gently melt the coconut oil and maple syrup in a small saucepan set over low heat. Pour into the dry mixture and stir to combine. Transfer to the baking tray and spread out into a single layer.
Step 4
Bake for 25–35 minutes, stirring once or twice, until deeply golden. Remove from the oven and set aside to cool. Store in a sealed container or Kilner jar for up to 4 weeks.
