- 2 tablespoons sesame oil
- 3 cloves garlic
- 1 tablespoon brown rice miso paste
- ½ tablespoon maple syrup
- 1 tablespoon apple cider vinegar
- 1 medium savoy cabbage
- 4 tablespoons chilli oil
- small handful of coriander leaves

Preparation
Step 1
Preheat the oven to 180°C fan / 400°F and line a flat baking tray with baking parchment. In a small bowl, whisk together the sesame oil, garlic, miso, maple syrup and vinegar; then massage this into the cabbage wedges. Place the cabbage on the baking tray and bake for 25–30 minutes until charred and soft.
Step 2
Whisk all of the tahini dressing ingredients together in a bowl and season to taste.
Step 3
Put the pumpkin, sunflower and sesame seeds into a dry pan and fry for 1–2 minutes until golden.
Step 4
Place the cabbage wedges on a platter, drizzle with the tahini dressing and chilli oil, then sprinkle over the toasted seeds and some coriander.
