- 2.2 lb cauliflower
- 14 oz sweet potatoes
- 1 onion
- 2 large cloves garlic
- 3 tablespoons olive oil
- 248g canned butter beans
- 2 large handfuls of kale

Preparation
Step 1
Preheat the oven to 200°C fan / 425°F. Pour the cashews and hot stock into a heat-proof bowl; set aside to soften.
Step 2
Place the cauliflower, sweet potato, onion, garlic and 2 tablespoons of olive oil in a large casserole dish, season generously and toss together. Bake for 35–40 minutes until tender and golden.
Step 3
Tip the cashews and stock into a high-speed blender, followed by the oat milk, nutritional yeast, mustard, lemon zest and juice, some salt and plenty of black pepper; blitz until smooth.
