- 6 large Portobello mushrooms
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 clove garlic
- 1 teaspoon fine sea salt

Preparation
Step 1
Prep the mushrooms. Mix the olive oil, paprika, garlic and salt and evenly brush the mix over the surface of each mushroom (or massage on using clean hands). Set aside to marinade for 10 minutes.
Step 2
Mix the salsa ingredients in a small bowl, set aside.
Step 3
Make the dressing. Simply place all of the ingredients into a high speed blender and blitz until smooth and creamy.
Step 4
Place a frying pan over medium-high heat and add the mushrooms. Cook for 4–5 minutes on each side, pressing down occasionally using a large, flat spatula to ensure maximum contact with the frying pan for maximum flavour. Remove and slice into thin strips.
Step 5
Give the frying pan a quick rinse, dry and place back over high heat. Add each corn tortilla to the pan and heat for 20–30 seconds on each side. Remove and wrap in a clean tea towel as you cook each tortilla, to keep them soft.
Step 6
Build your tacos! Sprinkling fresh coriander over the top.
