- 3.5 oz jumbo oats
- 3.5 oz almonds
- 1 tablespoon almond butter
- 3.5 oz dried mango
- 3.5 oz 70% cocoa dark chocolate

Preparation
Step 1
Place the dried mango in a bowl and cover with boiling water. Leave to soak for 10 minutes in order to soften the mango.
Step 2
Once soft, drain the mango and place into a food processor. Add the oats and almond butter and blend until the mixture becomes thick and sticky.
Step 3
At this point, add the almonds and blend again until they break down and the mixture comes together to form a thick ball.
Step 4
Place the mixture in the fridge for 30 minutes.
Step 5
After 30 minutes, scoop out equal spoonfuls of the mixture and shape into cookie shapes using your hands - this mixture should make around 7 cookies.
Step 6
If using chocolate, simply melt the chocolate over a very low heat, constantly stirring to ensure the chocolate doesn’t burn. Once melted, spoon the chocolate over the top of the cookies and leave to one side to set.
