- 1 small red onion
- pinch of sea salt
- 10 oz cherry tomatoes
- 300g tortilla chips
- 100g piquillo peppers
- 1 teaspoon smoked paprika
- pinch of sea salt & black pepper
- drizzle of olive oil

Preparation
Step 1
Place a pan over a medium heat and add a drizzle of olive oil.
Step 2
Once warm, add the onions and a pinch of salt and pan fry for 10-15 minutes until soft.
Step 3
Once soft, add in the tomatoes, peppers and smoked paprika and cook for another 5 minutes, stirring continuously, until soft.
Step 4
Once everything has cooked, lay the tortilla chips out in a large bowl, and top with the cooked vegetables, avocado, spring onions and dollops of tomato salsa before serving.
